Beyond beef is a great plant-based meat substitute and I use it often for everything from meatballs to burger patties, to kofta kebabs. Each serving offers 20 grams of protein.

The unique flavor combines well with Greek seasoning in this Beyond meatballs recipe.

Ingredients

This is a brief overview of the ingredients used in this recipe followed by substitution ideas. Read the recipe card for measurements.

Beyond beef, breadcrumbs, onion, seasoning, salt and pepper, and feta cheese on a white marble counter.
  • Beyond Beef: I use Beyond Meat’s plant-based ground called Beyond Beef. I like the based flavor which is spiced and a little smoky.
  • Greek Seasoning: Greek seasoning is a mix of spices including oregano, parsley, thyme, basil, onion powder, and garlic powder, and sometimes includes dill, rosemary, or marjoram. I make this Greek seasoning mix and always keep it on hand because I use it so often.
  • Feta Cheese: I love the saltiness of feta cheese. If you’re not a fan, simply omit it. The feta style block by Violife works well in this recipe.
  • red onion: for flavor and texture
  • panko breadcrumbs: for texture. Use regular breadcrumbs or make breadcrumbs by blitzing some bread in a food processor.
  • kosher salt and black pepper: as usual, for seasoning

Substitutions

  • You can try the Impossible meat replacement products, I can’t have them due to a soy allergy.
  • Meat eaters can use ground beef instead of beyond beef.
  • Want Italian meatballs instead? Substitute Italian seasoning for the Greek seasoning and use grated Parmesan cheese instead of Feta. Serve with marinara sauce and cooked pasta or on a large bun topped with cheese as a meatball sub.

Tips for Making Beyond Meatballs

  • Using a meat thermometer is the most accurate way to check for doneness.
  • Change up the spices and cheese if you want to. Try Italian seasoning.
  • Using a cookie scoop helps evenly portion the veggie balls so they cook at the same rate.
  • Spice it up? Add 1/2 to 1 teaspoon of red pepper flakes to the mixture.

What to serve with Greek Beyond Beef Meatballs
