- Using the sauté function, brown the shallots in oil (2-3 minutes) and then cook the garlic (1 minute). Add the rice and orzo and briefly toast (2-3 minutes).
- Add the salt, lemon juice, and water and scrape the bottom of the pot well to prevent a burn warning. See more about burn warnings.
- Add lid and set to seal if needed (my model seals automatically). Set to Pressure Cook on High for 4 minutes.
- After pressure cooking allow for a 10 minute natural pressure release.
- Perform a quick pressure release.
- Fluff with a fork and stir through the lemon zest, dried dill, and fresh parsley. Serve.

What is a natural pressure release? A natural pressure release means to let the pressure cooker release some of the built-up pressure on its own. A quick pressure release means you release all of the built-up pressure immediately by turning the sealing knob to venting.

How to prevent a burn warning on your Instant Pot
When you’re sautéing in the Instant Pot, add a small amount of liquid after sautéing to deglaze the pot. Stir and scrape the bottom of the pot. This helps release any browned bits stuck to the bottom, which add flavor, and it helps prevent the Instant Pot from showing a burn warning.
When using the Instant Pot, it’s best to scrape the bottom well and always follow instructions for layering ingredients. For example, with pasta, you want to lay it on top of the liquid and gently submerge it, verses stirring it in. I usually do the same when using thick crushed tomatoes. Always use at least 1 cup of liquid in the Instant Pot.
What do I do if my Instant Pot says burn?
Once you have a burn warning on the Instant Pot it’s difficult to continue with the recipe. But here are a few tips that sometimes work, depending on how much burning there is.
You can try scraping the bottom again if it isn’t too burnt.
If it’s really burnt you may want to transfer the food to a different pot first, and then scrape the pot and wash it. Fully dry it, and add the rest of the food back to the pot.
You may want to add some water, maybe 1/2 cup, and then guess how much time was remaining and start pressure cooking again.

For a weeknight dinner, serve lemon rice with a Greek halloumi wrap, or a chickpea burger and Greek cucumber salad for added protein and vegetables.
Storage
Let the rice cool to room temperature and then store in the fridge in an airtight container for 3-4 days.

Ingredients
- 1 tablespoon olive oil
- 1 medium shallot - minced
- 1 clove garlic
- 1 1/2 cups Basmati rice
- 1/2 cup orzo
- 2 1/4 cup water - or vegetable stock
- 1/4 cup lemon juice - from 2 lemons
- 1 teaspoon lemon zest - from 1 lemon
- 1/2 teaspoon dried dill
- 1/4 cup parsley - chopped
Instructions
- Turn the Instant Pot on to Sauté.
- Heat the oil and then add the shallot. Cook for about 2 minutes, until browning. Add garlic and cook, stirring for about 1 minute or so
- Add the rice and orzo and cook for a minute or two, stirring, to lightly toast.
- Add the salt, lemon juice, and water. Stir. Scrape the bottom. This is important to prevent a burn warning on the Instant Pot.
- Set to Pressure Cook on high for 4 minutes.
- Allow a natural pressure release for 10 minutes.
- Perform a quick pressure release to release the rest of the pressure. Remove the lid and fluff the rice and orzo with a fork.
- Add the lemon zest, parsley, and dried dill. Mix. Serve.
