Using a fork, poke holes on all sides of the potatoes to prevent them from bursting in the microwave. Put the potatoes on a microwave-safe plate.
Microwave the potatoes for 5 minutes.
Check if the potatoes are done using a fork. If the fork slides easily into the largest part (center) of the potato, it is done. Smaller potatoes will be done in 5 minutes.
If the potatoes are larger and aren't done, flip them and cook them for another 5 minutes. Check if they are fork tender.If they still aren't done, cook for only one minute more at a time, checking for doneness.
Once the potatoes are done, scrape the skin off using a fork. (Or leave it on if you don't need super smooth mashed potatoes).
Mash the potatoes with a masher or fork.
Add plant butter, plant milk, and salt and pepper. Mash well.
Add optional flavor add-ins or serve hot.
